We know they do not expect or want frilly gifts and flowers and
most likely dont need another necktie, but fathers need
to know that they are loved and appreciated.
Since the third Sunday of June was designated many years ago as
an official time to honor dads, it has become a special day for
families to gather in tribute to the man of the house.
Just like all holidays and special occasions, however, its
easier for some than others. Those raised in homes where the father
is compassionate, loving and kind, often find the day to be a
joyous occasion, and most cant wait to shower him with gifts
of love and adoration.
For those whose father has not been such a positive role model,
it can be a painful day to get through. Trying to find just the
right card can be difficult sometimes, even Hallmark cant
help.
And, for those whose fathers have passed on regardless
of the relationship they had with their children the day
is not easy. Those with warm, happy memories are often consumed
with sentimental memories and long for days gone by. Others, with
painful remembrances look back with regret, wishing it couldve
been different and wondering what they could have done to make
it better, if anything at all.
Hopefully, as in my home today, there is a wonderful father figure
in your life who loves both child(ren) and mother unconditionally,
a man who takes his role seriously and sets the best example humanly
possible for those around him.
In one of the last papers my son wrote during high school, he
expressed his desire to someday be the man that his dad, Van Norris,
is. Thats the way its supposed to be, folks. Dads,
be the kind of man your son wants to be and consider the saying,
Any man can be a father, but it takes a special man to be
a dad.
Now for the wives and children, in case youre still trying
to decide how to sweeten the old boy up on his big day, here are
a couple of ideas:

Chocolate Crunch Mud Pie
1/3 cup butter
½ cup semi-sweet chocolate chips
2½ cups crispy rice cereal
Filling:
3 oz. cream cheese, slightly softened
½ cup sugar
1 tsp. vanilla extract
1/3 cup unsweetened cocoa powder
1/3 cup milk
8 oz. container frozen whipped
topping, thawed
Topping (optional):
½ cup heavy cream, whipped
Lightly spray a 9-inch pie plate with nonstick
cooking spray; set aside. Combine butter and chocolate chips in
large microwave-safe bowl. Microwave on high setting for 1 to
2 minutes, stirring at 20-second intervals, until melted. Add
rice cereal and stir to coat evenly with chocolate mixture. Press
mixture into prepared pie plate. Freeze 1 to 2 hours until firm.
In bowl with electric mixer, beat next five ingredients until
smooth. Fold in whipped topping. Spoon mixture evenly into prepared
crust. Freeze 4 hours, or until firm. Garnish with real whipped
cream and chocolate shavings, or a dusting of cocoa powder, if
desired.
Strawberry Whipped Sensation
4 cups fresh strawberries, divided
1 (14-oz.) can sweetened
condensed milk
¼ cup lemon juice
8 oz. whipped topping, thawed, divided
8 Oreo cookies, finely chopped
1Tbs. butter, melted
Line 8x4-inch loaf pan with foil. In large bowl,
mash 2 cups of strawberries. Stir in condensed milk, lemon juice
and 2 cups of whipped topping; pour into pan.
In small bowl, combine cookie crumbs and butter; press cookie
crumbs into top of mixture. Cover. Freeze at least 6 hours.
To serve: invert onto plate. Remove foil. Frost with remaining
whipped topping. Top with remaining strawberries (sliced). Store
leftovers covered in freezer.
