Shish-Kabobs Provide Great Meal With Little Effort

If you haven’t fired up the old grill yet, time’s a wastin’! Grilling is not only a quick way to prepare a healthy, delicious meal, but it also keeps the kitchen from turning into a disaster area.

I have found one of the easiest, most mouth-watering and versatile grill meals to be Shish Kabobs. All you need to do is thread chunks of your favorite meat and vegetables on a couple of skewers, throw them on the grill and with little effort, your meal is prepared.

You may create your own meal on a stick with unlimited possibilities. Choose from the list below, be creative and design your own, or try one of our featured recipes. It’s easy, requires only minimal time, and it’s fun as well as delicious.

Meat, Seafood, Poultry
Beef cubes
Sausages
Shrimp
Scallops
Oysters wrapped in bacon
Chicken cubes
Chicken livers
Turkey cubes
Pork Cubes

Veggies
Peppers (green, red or yellow)
Mushroom caps
Onion wedges
Cherry tomatoes
Zucchini or yellow squash chunks

Use tender cuts of meat or allow extra time to marinate beforehand. Everything should be cut into bite-size chunks which are not too small. Place items on skewers with others that require same length of time to cook. Add the more tender chucks on additional skewers toward the end of grilling time.

 

Jumbo Shrimp Kabobs
1 cup French salad dressing
¼ cup lemon juice
1 T. chopped parsley
18 jumbo shrimp, peeled
6 lemon wedges
12 cherry tomatoes
12 chunks green pepper

Combine French dressing, lemon juice and parsley in a bowl; add shrimp. Marinate in fridge several hours, drain, reserving marinade. Place one lemon wedge on each of six metal skewers. Alternate shrimp, cherry tomatoes and green peppers on skewers. Grill over medium coals for 6 minutes, turning once and brushing with reserved marinade. Serves 6.

 

Vegetable Kabobs
Bamboo skewers
Zucchini, sliced thick
Mushrooms
Cherry tomatoes
Pearl onions or onion wedges
Italian salad dressing

Soak bamboo skewers in water for several minutes. Marinate veggies in Italian dressing in a bowl for several hours. Drain vegetables, reserving marinade. Thread on skewers. Place on grill over low heat. Grill for about 10 minutes or until tender crisp, turning and basting frequently with reserved marinade.
