Comfort Foods Reign
This time of year, many of us are vacillating between
what we know is the right thing to eat and simply what we find
comforting to eat at least before the guilt returns.
At a recent covered dish event, someone commented about the large
dishes of mac and cheese, fried potatoes, homemade bread and cakes
on the table and how everyone mustve been thinking comfort
food on a cold, winters night. I did not realize the
irony in my response that drew a chuckle or two as I said, Ive
eaten so much comfort food lately that Im not comfortable
anymore. (How many of you know what Im talking about?)
Were nearly two full months past those resolutions, and
the excitement has temporarily worn off. Plates of
cookies and candies are showing up at the office again, its
too cold and nasty to get to the track, and the treadmill has
turned into a dandy clothesline. In just a few weeks, the shock
will hit us once again. Those traditional five holiday pounds
we gained have probably invited a few fiends to join them, and
before we know it, were going to have to work extra hard
to fit into those spring and summer outfits.
But, just for this week lets forget about all that
and take a walk back down memory lane to Grannys house.

Best Ever Meatloaf
½ cup breadcrumbs
1½ lbs. lean ground beef
1cup milk
1 large egg
¼ cup chopped onion
½ tsp. dry mustard
1 tsp. salt
¼ tsp. pepper
¼ tsp. ground sage
1/8 tsp. garlic powder
½ cup barbecue sauce (or)
combination of ketchup and brown sugar
1 Tbsp. Worcestershire sauce
Preheat oven to 350 degrees F.
Mix all ingredients except the (barbecue) sauce together; spread
meatloaf mixture into an ungreased loaf pan.
Spoon sauce on top bake, uncovered, for 1 hour.
Easy Chicken and Dumplings
3 lbs. chicken, cut up
2 med. onions chopped
3 ribs celery chopped
2 bouillon cubes
Salt and pepper to taste
¼ tsp. garlic powder
2 cups Jiffy or biscuit mix
2/3 cup milk
In a large stock pan, place chicken, onion, celery,
bullion, salt, pepper, and garlic powder. Add 4 quarts of water.
Bring to a simmer and simmer for about 45 minutes.
Remove chicken and when cool enough to touch, pull meat into bite
size pieces, discarding skin and bones. Return chicken to pot.
Bring back to a simmer.
In a bowl, mix biscuit mix and milk. Using a tablespoon scoop,
drop into simmering soup. Do not stir the dumplings!!
Cover and cook for about 10 minutes.

Easy Apple Cobbler
4 cups of peeled, sliced apples
1/3 cup apple juice
1 cup sugar
Yellow cake mix
11/3 cup water
1/3 cup oil
3 eggs
Flour
Slice apples. Mix apple juice and sugar, pour
over apple slices and stir lightly. Let set while you prepare
cake batter.
Prepare cake mix according to directions on the box.
Add apples to oiled/floured glass rectangle baking dish. Pour
¾ of cake batter over apples. Bake at 350 for 50-60 minutes.
Check cake at 50 minutes to see if it is done. Serve warm with
ice cream.
